This is my favorite vegan cookie recipe. It doesn't try to immitate non-vegan recipes, but instead makes use of some commonly used vegan ingredients such as maple syrup and ground cashews and oats. The dollop of jam in the center of each one makes them pretty to look at, not to mention tasty!
Preheat oven to 375 degrees. Grind the raw cashews and rolled oats together in a food processor for a few minutes. Pour mixture into a large bowl and add the remaining ingredients, except the jam. Mix all the ingredients together. [I add the water last, and pour in only enough to make a firm dough that holds together well.]
Form 24 round balls and place on a lightly oiled cookie sheet. With your thumb, form a small well in the center of each ball. Place a small amount of jam in each well.
Bake for 15 minutes at 375 degrees. Allow cookies to cool before removing them from the cookie sheet. These cookies make a wonderful gift.
